This is probably my favorite way to eat asparagus, and quite honestly, my only way. Sometimes I eat them with side of mashed potatoes, another time with roasted broccoli. Or just bundle by bundle right in my mouth. No cutlery needed.
Eating the bacon this way is actually better for me, so I don’t eat too much of it. And I eat some greens too! The asparagus! Can I say that is some greens? Cause usually my plate is full of protein, my source of fiber is beans which are also protein?
I seasoned this very lightly, cause bacon is naturally salty. In fact, you can skip seasoning all together and I am sure it will be as tasty. And the crunch from crispy garlic gives more taste to the bundles. These are my bundles of joy!
Ingredients:
1 lb thick asparagus -stalks trimmed
6 regular slices bacon
2 cloves garlic -minced
1 tbsp olive oil
Salt and pepper
1 tbsp parsley -chopped
Instructions:
- Preheat the oven to 400 degrees F.
- Divide the asparagus stalks into bundles of three. Tightly wrap one slice of bacon around each bundle.
- Arrange the asparagus bundles on a baking sheet and lightly season with salt and pepper. Remember bacon is naturally salty.
- Bake for 15-20 minutes or until bacon is crispy, remove and set aside.
- Use the bacon grease from the baking sheet (if there is any) or olive oil to sauté the garlic until lightly brown about 1-2 minutes.
- Cover the asparagus bundles with garlic and the oil.
- Sprinkle with parsley, enjoy!
