Three Bean Salad

This one is perfect for the summer. I had three bean salad the very first time at a barbecue house. This is one of the many side dish they offered. Even for my salad, it must be hearty. Give me all the protein!

You can make this with any beans you desire. You can also use red onion for extra sweetness. But make sure to use a great quality extra virgin olive oil for the dressing. It is important because the flavor of this salad is from soaking the beans in the dressing.

This is the easiest recipe ever, there is only one step in the instruction, really. Just toss them all up nicely, marinate and serve.

Ingredients:

1 15oz-can of garbanzo beans -rinsed and drained

1 15 oz-can of black beans -rinsed and drained

1 15 oz-can of red beans -rinsed and drained

1/2 medium onion -finely chopped

3 cloves of garlic -minced

1/3 cup of extra virgin olive oil

1/2 cup loosely packed Italian parsley -chopped

1/2 tbsp cumin

2 limes -juiced

Salt and pepper

Instructions:

  • In a large bowl, add all three beans, onion and parsley.
  • In a small bowl, whisk garlic, lime juice, olive oil, cumin, salt & pepper.
  • Cover the bowl with saran wrap and put in the fridge for several hours. Allowing the beans to soak up the goodness of the dressing. 
  • Let it come to room temperature before serving. Enjoy!
