I actually love salmon when it’s raw, I think they are so much better. More fatty and succulent. Cooking salmon can be tricky, too long it could dried up the entire dish and we don’t like dried salmon. I opted for smoked salmon most of the time, but it’s not easy or cheap to get smoked salmon where I live. And, raw salmon need to be the highest quality and I have no way of getting fresh-just cut-raw salmon.
So I had to accept the idea of cooked salmon. It is not the worst thing in the world (it is still salmon!) especially if you know how to cook it right. Now after doing some experiments with countless salmon fillets. I gotta say, cooked salmon is not all that bad. Try this recipe and let me know what you think!
Ingredients:
4 boneless salmon fillets
Salt and pepper
2 tbsp butter -melted
4 cloves garlic -minced
3 tbsp honey
Juice from 1 lemon
1/2 tsp dried parsley
Pinch of cayenne pepper
Instructions:
- Preheat the oven to 400F. Line a baking tray with parchment paper.
- Season both sides of salmon fillets with salt and pepper. Then place them, skin-side-down on the baking tray.
- In a small bowl, add the melted butter, lemon juice, garlic, honey, dried parsley and cayenne.
- Pour the mixture over the salmon fillets.
- Place in the oven and bake for 8-10 minutes, depending on how thick the salmon fillets are. Or until the fillet flakes easily with a fork.
- Take them out from the oven and baste the fillets with any of the excess sauce. Enjoy!
