Homemade Pan Sheet Pizza

I discovered my love for pizza when I lived in the US. I never liked pizzas that were sold in Indonesia, I think that the sauces were always too sweet. Like they put so much ketchup and instead of the proper tomato sauce made by Italian nonna. But, I’m team white pizza all the way!

I love my pizza with generous toppings and thin crust, as thin as possible, barely able to hold all the toppings, that is the sign of wonderful pizza to me. Extra cheese is always a must. And now that I have a proper sized kitchen to myself, I’m able to make my own pizza, all from scratch and I’m sharing the recipe with you guys!

Please remember to sprinkle generous amount of cheese on the edges of the pizza, whether your pizza is round or rectangle. This way, you eat all the crust without leaving any behind. Who else used to leave the crust behind?


Ingredients:

For Pizza Dough:

1 cup + 2tbsp all purpose flour 

1 tbsp sugar

1/2 tsp instant dry yeast

1/2 tsp salt

1/2 cup lukewarm water

For toppings:

1/3 cup Alfredo sauce

1 medium chicken breast 

Salt and pepper

8 oz baby spinach -sauteed until a little wilted

6 oz champignon mushroom -sauteed 

1 cup shredded mozzarella cheese

Instructions:

  • Make the pizza dough by combining flour, sugar, yeast and salt in a medium bowl.
  • Add the water and knead for about 5 minutes on a lightly floured surface.
  • Shape the dough onto a ball and place in a lightly oiled bowl, cover with plastic wrap and let it rest for 1 hours or until the dough has double in volume. 
  • While the dough’s resting, season the chicken breast with salt and pepper on both sides. 
  • In a medium skillet over medium high heat, cook the chicken breast for 4-5 minutes each side until cooked through. Remove chicken from pan. 
  • Shred the chicken or cut into cubes approximately 1/4 inch thickness.
  • Sauté the baby spinach and mushroom with a little oil and salt to taste.

  • Pre-heat the oven to 450F.
  • When the dough has finished resting, shape the dough onto a sheet pan, I used 11 x 14 inches pan. Make sure to stretch the dough to cover all the corners and edges of the pan.
  • Assemble the pizza by spreading the Alfredo sauce onto the dough, then add the cooked chicken, spinach and mushroom, top with cheese. Make sure to put enough cheese on the edges of the pizza so the crust will come out nicely.
  • Bake the pizza in the preheated oven for 13-15 minutes or until the toppings turn golden brown. Slice and enjoy!
