Easy Frittata

I love the way this one look! It gives me some summer vibes. This recipe used to be the only way to get me eat some veggies. My roommate who is a vegetarian was about to pick one slice of this, he didn’t know there was chopped ham! Obviously you can leave out the ham if you want to make this vegetarian. But not me, I would’ve added some bacon instead.

Since I can’t share this with anyone in the house, this is actually perfect for the lazy morning, I ate two slices of this for breakfast and it was good for a couple of days. And it was fun to make, you can use any veggies or type of meat for this, so there were no rules really. Even if you only had feta and spinach! I just added some tomatoes for the colors.


Ingredients:

10 eggs

1/4 cup heavy cream

1 tbsp butter

1 tbsp olive oil

1/2 onion – diced

1 medium zucchini -thinly sliced

6 oz baby spinach

6 oz ham -cubed

6 oz cherry tomatoes -halved

6 oz feta – crumbled

Salt and pepper

Instructions:

  • Preheat oven to 400F
  • In a large bowl, crack all the eggs, add salt & pepper and cream and whisk to combine. 
  • In a large skillet over medium high heat, add butter and oil. Add onion and cook for a few minutes until the onion starts to brown. Add zucchini and spinach, stir and cook until wilted. 
  • Add eggs, cherry tomatoes, ham and feta and put in the oven, let it cook for 25 minutes or until the eggs are set and the top looks golden brown.
  • Let it rest for 3-5 minutes before slicing and serve. Enjoy!
