I love cooking and eating Western inspired food. They don’t need that many ingredients, and lets face it, I always fail when I cook my own Indonesian food. Edible but not successful. This salmon with creamy sauce for example is so easy to make and you don’t need much to prepare.
But, living in a tropical country, we don’t have that many salmon, if any. When I went to the local market, the salmon were either from Alaska or Norway, so I assumed they came to our country frozen. So there are no fresh salmon here! Let me know if I’m wrong. Oh yeah, the tropical country I talked about is Indonesia.
When it comes to buying fresh lemon, I looked and looked, and our local lemons look like oranges but yellow. So I had to buy the Californian lemon, because that is the lemon I know how to cook with. Yes, you don’t need many ingredients to cook Western food, but to cook it here, it could easily break your bank. But yes please, make this recipe anyway, it’s worth it and it’s fancy!
Ingredients:
1 tbsp olive oil
4 salmon filets -around 150-200gr each
2 tbsp butter
1 tbsp flour
4 cloves garlic -minced
1/2 cup vegetable broth
1 cups whole milk or cream
1/4 cup fresh Parmesan cheese -grated
2 tbsp fresh dill -chopped
Juice of 1/2 a lemon
Salt and pepper
Instructions:
- Season salmon with salt and pepper generously on all sides.
- In a large skillet over medium high heat, heat oil and sear the salmon, skin side down for about 3 minutes, flip over and cook for another 3 minutes. Remove from the pan and set aside.
- In the same skillet, melt butter. Sauté garlic until fragrant, less than 1 minute. Add flour and create a roux. Pour in cold milk, vegetable broth and give it a good stir, while scraping any bits off of the bottom of the pan. Bring it to a boil.
- Reduce the heat to low, add parmesan cheese and allow sauce to gently simmer for a further minute or so until the cheese melts and sauce thickens. Adjust seasoning with salt and pepper.
- Add the salmon back into the pan, sprinkle with dill and a squeeze of lemon juice.
- Serve with pasta or roasted veggies. Enjoy!
NOTES: If you use cream, you can omit the flour.
