Skillet Zucchini & Sausage

Once upon a time, I went to the grocery store to get cucumbers, and I ended up with zucchini instead. And I called my self a foodie. How do I hold my self accountable if I can’t even tell the difference between the two?

Anyhow, fast forward to me cutting the ‘cucumber’ in half only to realize, I can’t make tzatziki with this. So my friend Dini, to the rescue! After I made fun of myself to her about what had happened, she told me that I could just stir fry the zucchini and it would be edible. So I did, like everything else in my life she told me I should do.

I checked my fridge and I found a sealed packet of sausage, and a tree of dill, that’s all, I have nothing else. As my mom always does in the kitchen, when she didn’t have enough ingredients to make a stir fry of anything, she always adds scrambled eggs. So I borrowed some eggs from my roommate and that is how I created this.


Ingredients:

2 medium zucchini -diced

2 cloves garlic -minced

1 medium yellow onion -diced

4 sausages -sliced

3 eggs -beaten

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp Italian seasoning

Salt and pepper

Instructions:

  • In a large skillet, cook the eggs over medium high heat, scrambled until golden brown, set aside.
  • Using the same skillet, cook the sausages until nice brown on both sides, set aside.
  • Using the same skillet, reduce the heat to medium, saute the onion, add some salt & pepper and cook for about 3 minutes.
  • Add diced zucchini, minced garlic, garlic & onion powder and Italian seasoning, and cook until zucchini are tender, for about 6-7 minutes.
  • Add the scrambled eggs and sausages to the skillet, give it a good stir, and cover for 1-2 minutes. Add salt and pepper if needed. Enjoy!
