
This one right here is the definition of pretend cooking. I even bought the pre-washed baby spinach. Summer is approaching so this fresh and light salad is a go to and must eat. I have a great idea to share here, whenever I buy lox for salad, I got the trimmings. It’s cheaper and more fatty, that fat is rich with omega 3? 6? 18? I don’t know but I know it’s the good fat.
Please tell me any better combo than dill and lox? Actually don’t answer that, cause there are so many, but here the dill not just to tie everything visually, but also tastefully. Oh, lox is smoked salmon for anyone who’s wondering.
Ingredients:
8 oz baby spinach
1/2 pint cherry tomatoes -halved
2 oz lox/smoked salmon
1 tbsp dill
1/4 cup olive oil
2 tbsp lemon juice
salt and pepper to taste
Instructions:
- Vinaigrette: in a small bowl, whisk olive oil and lemon juice. Add salt and pepper. Set a side
- Put the rest of the ingredients in a bowl.
- Drizzle them with vinaigrette. Toss toss toss. Enjoy!
