Simple Aglio e Olio

I finally have a recipe for our vegetarian friends, or vegan if you leave out the parmesan. Either way this recipe is so simple and you only need a few things. You may find all of the ingredients in your pantry, no need to even go to the store. Perfect for self-isolation week or on regular basis really!

You can for sure substitute the pasta with any type of pasta, my favorite would be with filled pasta like tortellini or ravioli, cause I don’t have to add extra protein (read: meat). I also once added can tuna in the dish and they all go together perfectly! This is one of my very first recipe I developed so it’s very near to my heart and would be incredible if you guys give it a try and notify me!


Ingredients: 

1 pound dry spaghetti

Salt and pepper to taste

6 cloves garlic -thinly sliced

1/2 cup extra virgin olive oil

1/4 teaspoon red pepper flakes -or to taste

1/4 cup Italian parsley -chopped

1 cup parmesan cheese -finely grated

Instructions: 

  • In a large cold skillet, add olive oil and sliced garlic. Turn on the heat to medium, and slowly and occasionally stir oil and garlic together.
  • And while the garlic is toasting, cook the pasta according to the box for al dente. The pasta and the sauce cook at the same amount of time. Beautiful!
  • Once the oil bubble, turn the heat to medium low. Let the garlic just lightly lightly toast to golden brown, pay attention, don’t check your instagram while doing this. Basically what we are doing here is to infuse the toasted garlic flavor into the oil without getting the garlic too dark/bitter. This takes about 5 minutes.
  • When the garlic is golden brown, turn off the heat and add about half a cup of our boiling pasta water. The water will stop the further browning process of the garlic.
  • Once the pasta is cooked, drain and please do not rinse the pasta, NEVER rinse the pasta!
  • Put the pasta into the skillet of garlic oil, add red pepper flakes, chopped parsley and grated parmesan.
  • Use thongs or a large carving fork to create a nest, this part isn’t necessary, just for nice presentation. Enjoy!
