Garlic Parmesan Smashed Potatoes

I believe this recipe is an internet sensation at the time. It’s from tiktok if I’m not mistaken. So many people have asked me why didn’t I join tiktok. There are so many talented young (old too) people in there, I laughed my ass off every time I watched some funny videos from there. They produce content as fast as I eat. I can’t compete with that.

Well here is my take on the smashed roast potatoes, originally from tiktok. I added all the goodness I like and staple for my kitchen. Parmesan and garlic! I also used baby potatoes, but more like toddler ones. There are just the perfect size for us to smash. I couldn’t find the medium or small sized of Yukon gold, so I ended up with these large baby potatoes. But obviously you can use any potatoes you want. And for the topping also, go nuts! This recipe is just my recommendation.


Ingredients:

2 lbs large baby potatoes 

Olive oil spray

4 tbsp salted butter -melted

4 cloves garlic -chopped

2 tbsp fresh parsley -chopped

4 tbsp parmesan cheese -shredded 

Salt and pepper

Instructions:

  • Preheat your oven to 400F.
  • Clean or scrub potatoes under running tap water. Then, in a large pot of salted water, add potatoes. Bring to a boil, cook covered for 20 minutes or until just fork tender. Drain.
  • Lightly grease a large baking tray with olive oil spray. Arrange potatoes on the tray and use a mug or potato masher (if you have one), to slightly flatten the potatoes, keeping them in one piece. Thinner means crispier, thicker means fluffier. Either way, you are your own hot potato!
  • Mix together the butter, garlic and parsley. Pour the mixture over each potato. Sprinkle potatoes with salt and pepper. Bake until they are golden and crispy, about 20-30 minutes.
  • Remove from oven, sprinkle each potato with parmesan cheese and return to the oven until the cheese is melted and golden.
  • Serve immediately with some sour cream or any sauces of your choice. Enjoy!
