Easy and Cheesy Baked Chicken

Looking back to this recipe actually made me miss New York so much. I’m currently in Indonesia where the lack of cheese (any types) is a constant struggle for me to create a new recipe. I love cooking with cheese and I love eating them too. Oh I only love cooked cheese, so no brie or camembert for me.

This recipe is so easy and call for very minimal ingredients. I love putting Italian seasoning on anything so I added it here. But you can skip that if you desired. The marinara sauce is so rich in flavor, you don’t need anything else, really. Also please adjust the cooking time depending on how big the chicken you are using. If you want to be sure and secure, stick in the thermometer and the breast should be at least 160F.

Ingredients:

4 chicken breasts , skinless, boneless

1/2 tbsp Italian seasoning

Salt and pepper to taste

1 cup marinara sauce

1 cup Mozzarella cheese -shredded

1 tsp fresh parsley -chopped

Instructions:

  • Preheat the oven to 375 F.
  • Season both sides of each piece of chicken with Italian seasoning and salt & pepper.
  • Pour marinara sauce evenly and use a spoon to spread over the chicken.
  • Top with shredded Mozzarella cheese.
  • Bake, uncovered, until chicken is cooked completely, around 20-25 mins. 
  • Broil for the last 5 minutes to crisp up the cheese. 
  • Let the chicken rest for 5 minutes, garnish with parsley then enjoy!
