Hamburger Soup

I love hamburgers! There was a period where I eat double quarter pounder from McDonalds every night for dinner for 9 days. I did it because there was a promotion that if you buy one, there is a coupon on the receipt for another one free, so I used it for the next night. And on the 9th day when I bought a burger, the receipt no longer had coupon in it. Bummer!

What was the point of my confession? Not sure. But after eating burgers so much and so often, you want to have a bit of comfort food. So this recipe came into fruition.

Ingredients:

1 pound ground sirloin

1 whole medium onion –diced

2 stalks celery, diced

3 cloves garlic, minced

1 28 oz can whole tomatoes

4 cups beef broth

2 whole potatoes (I used russet) -cubed

2 tbsp tomato paste

1 tsp Italian seasoning

1/2 tsp cayenne

salt and pepper to taste

2 tbsp parsley –chopped

Instructions:

  • In a large pot over medium-high heat, sauté onion and celery for about 3 minutes. Add ground sirloin and cook until the meat is brown. Remove the pot from the heat and drain off as much fat as you can. If you use very lean ground beef, you can skip this step.
  • Return the pot to the heat and add can whole tomatoes, beef broth and tomato paste, Italian seasoning and cayenne pepper. Stir to combine, bring to a boil, then add potatoes. Cover the pot and reduce heat to medium-low. Let it cook for about 20 minutes or until potatoes are tender
  • Add salt and pepper to taste, sprinkle some chopped parsley. Enjoy!
